This is a slightly misleading title. You actually have to soak the egg in apple cider vinegar in order for this insulin response to be effective. Still a good breakfast though, the boiled egg and vinegar tastes accommodate each other. The science seems sound too, the protein in the eggs helps keep you full and the vinegar encourages insulin sensitivity. I have stable blood sugar (and incidentally eat a LOT of eggs), but this is one I’m curious about and will share with my mother, who is Type II Diabetic.
