Since high school, I’ve been the kind of person who ate her vegetables and all things “good” for me, whether or not they were super tasty, because it was important for me to eat healthy and be healthy. It still is. And I’m superbly lucky, (or else, eating lots of broccoli and spinach while pregnant predisposes your children to do the same) to have a toddler who likes broccoli and spinach enough to eat a few bites of it with her starchy meals. But I’m ALL for transforming these healthy eating experiences into enjoyable meals. I suppose if you put the word “crack” in front of any food, the implication is that everyone will like it. I haven’t made this yet, but I will. If you do, let us know what you think!
