I don’t know if you have heard about this very beneficial edible “weed” but I have been eating it since I was a child it tastes great! If you ever find it in your yard don’t kill it, eat it!
Purslane is a highly recognizable “weed” that also happens to be the only one packed with Omega-3 fatty acids. I was a sucker once and paid for it a farmer’s market, not realizing I could just pick it out of anyone’s yard, for the most part. But now that I know how abundant it is, I will harvest it whenever I see it!
I like eating it fresh by adding it to a green salad but pickling it is another great option if you’d like to keep a stockpile for the winter or make some interesting garnishes for your dinner entrees.
