I love creative spaghetti squash recipes like this one! I eat spaghetti squash pretty frequently in the fall, but I’m quite boring about it, eating it like pasta with an Italian meat sauce. I love enchiladas, and I love the high fiber, starch substitute that this squash provides. So this dish sounds like a winner to me and I will be trying it this week!
ingredients
2 small spaghetti squash, cut in half and seeded
1 tablespoon oil
salt and pepper to taste
1/2 pound chicken, cooked and shredded
2 cups enchilada sauce
1/2 cup black beans
1/2 cup corn
1/4 cup cilantro, torn
1/2 cup cheddar cheese, shredded
1/2 cup Monterey jack cheese, shredded
