The last time I hosted Thanksgiving dinner, I made a sweet potato pie instead of pumpkin pie. I figured it’s the spices that make the pie, so no one will tell the difference. Well, apparently they could. Maybe not enough sugar? I’m not sure, but I want to try THIS particular recipe since it involves adding caramel and meringue.
Ingredients:
1 homemade pie crust double pastry
1(29 ounce) can sweet potatoes or yams
3 tablespoons unsalted butter softened
1 cup light brown sugar packed
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
2 teaspoons vanilla extract
3 large eggs
2 large egg yolks
1/2 cup homemade caramel sauce or any store-bought variety
4 egg whites room temperature
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1 cup granulated sugar
