I’ve taken the time to roast pumpkin seeds from my carved pumpkin only one other time before and they came out very chewy and unenjoyable. Now I know why. I skipped a step. I dried them out after washing them and went right on to roasting. This recipe has you boil the seeds first. So that might make all the difference!
