It seems pickling gets all the fame and glory while fermented foods, while less glamorous somehow, are far more nutritious and less involved to produce. This was an interesting read for me, mostly because, I erroneously thought for years that pickled foods were the same as fermented foods. OOPS! The pickling process uses vinegar and lightly cooked foods, killing enzymes and nutrients. Fermented foods, on the other hand, use fresh foods and a brine, to allow the fermentation process to occur.
