Yes, I realize it seems like there are a lot of vitamins and minerals that we could be deficient in. Let’s face it: That’s because we eat like crap. Copper is one of those mysterious minerals that you don’t hear a lot about it but is in fact, an essential dietary element. Too much can cause problems, yes. But this is rare. Only 25% of Americans seem to be getting the right amount of copper, and not getting enough can result in fatigue, joint pain, and hair loss, among other things. Food sources high in copper include shellfish, dark leafy greens, sesame seeds and dried fruits. (You can see how it’s possible that many people can be deficient!)
