I had to take a break from our regularly scheduled Christmas recipes to post this heavenly sounding poundcake. Pecans and coconuts are two of my most favorite non-chocolate dessert items. I kind of put them in everything else, like my oatmeal and yogurt too. This sounds like a perfect dessert for someone like me who wants to dip her toes in sweetness without getting drenched. The powerful flavor of coconut cream cheese, combined with the nutty, rich texture of pecans, with a buttery poundcake backdrop sounds about as fulfilling as a dessert can get!
