I don’t think I would have figured out what these cupcakes were supposed to be without reading the description, but now that I know….how cute are these?? I suppose these were a hit and the recipe in demand, so here it is!
INGREDIENTS
For the chocolate cupcakes:
1 1/2 cups sugar
2 cups canola oil
2 eggs
2 1/2 cups all-purpose flour
2 tablespoons cocoa powder
1 1/2 teaspoons baking soda
1 cup buttermilk
2 teaspoons vanilla extract
1 teaspoon salt
For the mousse:
1 cup heavy cream, divided
2/3 cup white chocolate chips
1/2 tablespoon powdered gelatin
2 egg yolks
For the frosting:
3/4 cup vegetable shortening, room temperature
3/4 cup unsalted butter, room temperature
5 cups confectioners’ sugar, sifted
1/2 cup milk
1 cup cocoa powder
2 teaspoons vanilla extract
1/2 teaspoon espresso powder
Fondant decorations, optional
