I’ve made this dish twice now and I can vouch that it’s tasty, easy and relatively quick. And I say this with certainty, having just prepared this meal with my right hand while holding my nursing newborn with my left. No joke. Chopping the veggies takes the longest, so if you’re a super low-maintenance cook and don’t mind spending the extra bucks, you can get the pre-chopped veggies from the store OR just use a frozen mix. I actually have not even used the squash at all. Just broccoli and onions, and today, mushrooms. Oh, and the potatoes. You kind of need those!
