My only problem with a no-carb diet is that I am a bread addict. If I don’t eat bread I turn into grumpy mood. Oopsie rolls have always been a favorite in the low-carb community, and for good reason! They are fluffy, light “buns” made of eggs, cream cheese and some cream of tartar. They are the perfect keto “bread”, you can use them in almost any sandwich, or you can enjoy them on their own.
- Is cloud bread actually bread?
Cloud Bread is all the rage now. This is a soft, airy bread made with only eggs, a little cream cheese (some people use cheese) and cream of tartar.
- How long does cloud bread last?
If the cloud bread is kept at room temperature, it will last about 3 days. If you keep it in the refrigerator, it’s more like a week! You can even freeze the bread-we recommend placing the bread flat in a resealable plastic bag with parchment paper between each piece. To reheat, lower the toast position on the grill of the toaster to avoid burning!
Ingredients
- 3 large eggs, at room temperature
- ¼ tablespoon of cream of tartar
- 2 oz. cream cheese, softened
Directions
1.Preheat the oven to 300°, then line a large baking sheet with parchment paper.
2.Separate the egg white and egg yolk into two medium-sized glass bowls. Add tartar and salt cream to the egg whites, then use a hand mixer to stir until stiff peaks appear for 2 to 3 minutes. Add cream cheese to the egg yolk, then use a hand mixer to mix the egg yolk and cream cheese until combined. Gently fold the egg yolk mixture into egg whites.
3.Divide the mixture into 8 pounds on the prepared baking sheet and space them about 4 inches apart. Bake until golden brown for 25 to 30 minutes.
4.Sprinkle cheese on each loaf of bread immediately, then bake until melted, and heat for another 2 to 3 minutes. Let it cool down a bit.
