Maybe this isn’t a traditional Christmas cookie, but I think the pop of yellow and the fresh citrus flavor will be a nice balance to the rest of the holiday cookies in your tin. I never thought I liked “fruity” desserts until I had a lemon square. And then key lime pie. Two of my favorites now! I imagine this lemon curd cookie will be a nice burst of lemony goodness in one lovely bite.

LEMon Curd Cookies – MADaboutkitchen
Ingredients
- 1/2 cup – Unsalted butter, softened
- 1/4 cup – Caster sugar or powdered sugar
- 1 Egg yolk ( no whites)
- 1/2 tbsp – Grated lemon zest
- 1 tbsp – Lemon juice
- 1/2 tsp – Salt
- 1 1/4 cups – All-purpose flour
- 1/2 cup – Lemon curd
